Derived from the Italian word for "little oranges," aranchini is made by shaping creamy risotto stuffed with Italian cheese into bite-sized balls, then rolling the balls in panko bread crumbs and frying them to golden perfection. These are made with Italian Arborio rice, smoked ham, fresh green onions, and Swiss cheese for the ham and Swiss aranchini, and a special trio of cheeses for the three-cheese aranchini.
