Happy Hour: Deconstructed Mango Margarita
Deconstructed Mango Margarita:
4 oz. Casa Dragones 100% Blue Agave Joven Tequila
4 oz. water
4 oz. sugar
4 oz. Meyer lemon juice
4 oz. key lime juice
4 oz. Valencia orange juice
1 large mango, cubed
1/2 tsp. chili powder
Agave nectar
cilantro to garnish
This is a three step recipe.
Casita Granita: First combine water and sugar in a saucepan and heat to a boil. Stir often until sugar is dissolved. Boil at least one minute and remove from the heat. Cool and add lemon, lime and orange juices, stirring to incorporate. Pour into a glass baking dish and place in freezer. Stir after one hour to create crystallizing effect, then freeze for an additional 3 hours. Scrape mixture with fork tines to break ice into crystals and scoop into glass dish.
Dust mango cubes with chili powder and toss, then heap over citrus granita. Drizzle with agave nectar and garnish with cilantro leaves. Serve with forks.
Pour Casa Dragones tequila into champagne flutes. Sip. Spear. Repeat.
